Wild herb and mushroom expert, and award-winning chef Sami Tallberg brings his culinary vision to Café Maa on Friday 21 and Saturday 22 November 2025, offering a dinner that blends deep dedication to wild food, sustainable food culture, and the wisdom of nature.

Throughout the evening, Tallberg shares practical insights into the power of reconnecting with nature — both as a cornerstone of Finnish gastronomy and as a key to personal wellbeing.
You will also hear the historical background of why Finland’s Everyman’s Rights (jokamiehenoikeudet) — the freedom to forage — have been globally unique for over a century. These rights allow everyone, regardless of social status or background, to collect wild, nutrient-rich, and delicious ingredients freely and responsibly.
Tallberg’s repertoire includes over 120 edible wild plants and 80 edible mushrooms, each with distinctive culinary value. During the dinner, he shares stories behind the herbs, mushrooms, and berries on the menu — from their magical textures and flavour profiles to their beneficial properties. As guests enjoy the welcome drink, Tallberg will speak about his personal connection to nature and how wild food became his ikigai — his reason for being.
The experience will be enhanced by the immersive music of Uno Technopuro, whose electronic compositions inspired by Nordic landscapes create a hypnotic and poetic soundscape. Between minimalist rhythms and primal textures, he transforms the evening into a sensory journey where the Finnish forest seems to resonate in the heart of Paris.
